Mix the honey with water in a cocktail shaker stirring until the honey is dissolved. Add gin and lemon juice and fill the shaker with ¾ full of ice. Cover and shake until chilled, about 20 seconds. Strain the cocktail into a glass and garnish with a lemon twist or mint.

One needs 3oz of white rum, 3 tbsp of simple syrup, 2 tbsp freshly squeezed lime juice, ½ C of fresh mint leaves and sprigs for garnish, 2 ½ C of ice cubes, and ¼ C of seltzer or club soda. Add ice, rum, simple syrup, lime juice, mint, and seltzer/soda water to a blender. Blend until the ice has become crushed and slushy. Use 2 Tom Collins glasses or another tall glass and garnish with mint sprigs or serve as is.
