Though the demand for sugar has lessened, distillers continue to produce rum on the island using traditional methods. Using a special fermentation process, the rum from the islands is distinctly rich and flavorful. Plantation Rum Guyana 2007 is a limited edition, single cask rum from 2020. Crafted from casks chosen from the cellars of Demerara Distillers Ltd by Plantation Rum’s Master Blender Alexandre Gabriel and General Manager and rum historian at West Indies Rum Distillery Andrew Hassek.
This rum was distilled in Port Mourant pot stills and uniquely matured using a process inspired by a 300-year-old technique called double aging. After first maturing for 9.5 years in the tropical region, the rum is finished for one and a half years in 400-liter French oak barrels from Maison Ferrand in the Charente region of France.
The aroma of Guyana 2007 rum is filled with notes Pineau des Charentes, earthiness, cocoa, and fruity berry hints. The palate is dry and acidic with notes of apples, walnuts, balsamic, peanuts, red fruits, and pungent floral notes. The finish is rich with strong molasses notes alongside cocoa, and walnut.
