ArteNOM Seleccion de 1579 Blanco takes its name from the NOM of the distillery that makes it. That is Destileria El Pandillo, run by Felipe Camarena in Jesus Maria, Jalisco. The town sits around 6,788 feet up in the Los Altos highlands. Agave grows slowly up there and builds deep blue agave flavor.
Agave roasts slowly in brick ovens, then ferments with its fibers and rainwater. Small copper pot stills do the distilling. No wood touches the spirit, and Astor Wines notes it is additive-free.
On the nose you get bold roasted agave, rising pastry dough, spring rain and fresh mint. On the palate it feels velvety, almost like wine. A fresh chile tingle meets white pepper and spearmint candy. The finish stays complex, with pepper and mint lingering.
Sip it neat, or mix a simple Margarita. Pair it with ceviche or tacos.
If you want an authentic tequila with a sense of place, this bottle is for you.
