This XO Cognac is made only in the Grande Champagne region, which is known as the top area for producing long-aged and high-quality spirits. It is aged far longer than the required 10 years, and many experts say it averages around 30 years, so it offers impressive depth. The Cognac comes from Maxime Trijol, a family house that has been crafting spirits since 1859 and manages every step from grape growing to bottling.
It is distilled twice in small copper pot stills and made mainly from Ugni Blanc grapes, then aged in French Limousin oak barrels on the family estate. The chalky, mineral-rich soils of Grande Champagne also give the spirit a refined and expressive character. It is bottled at 40 percent ABV and usually sold in a 750 ml bottle in the US or a 70 cl bottle in Europe.
The Cognac has a deep topaz color with gold or mahogany tones, and it delivers rich aromas of liquorice, vanilla, dried apricot, fig, and cedarwood. The taste is full-bodied yet smooth, with a velvety texture and a long, soft finish. It arrives in a rounded decanter with a gold stopper, and it is best enjoyed neat at 20°C as a relaxing after-dinner drink or with a medium cigar.
