This sparkling wine is crafted by Emmolo Wines, part of the renowned Wagner Family of Wine, best known for Caymus Vineyards. The winemaker, Jenny Wagner, daughter of Chuck Wagner from Caymus, continues her family’s legacy with this elegant creation. The grapes are sourced from the cool coastal regions of Sonoma, Santa Barbara, and Monterey, where the climate is ideal for producing high-quality sparkling wines.
Made using the Traditional Method—the same technique used in Champagne—its bubbles form naturally during a second fermentation in the bottle, creating a fine, creamy texture. This wine blends Chardonnay and Pinot Noir grapes (for example, No. 7 features 65% Chardonnay and 35% Pinot Noir) and is a Non-Vintage (NV) style, meaning it combines wines from different years to maintain a consistent, balanced flavor.
Aged for an extended period, sometimes over 41 months, it develops smoothness and complexity. The taste is bright, crisp, and vibrant, offering notes of green apple, citrus, pear, and a touch of brioche or toasted bread. With soft, delicate bubbles and around 12.4% alcohol, this 750mL bottle reflects both quality and heritage. The Emmolo name honors Jenny’s mother’s family, who have grown grapes in Napa Valley since the 1920s. It pairs beautifully with seafood, light salads, goat cheese, and creamy pastas.
