Dow has been affiliated with the finest Port for over two centuries yielding from the vineyards from the Upper Douro Valley. The Symington family was build on the foundation of Silva and Dow families. Dow vineyards: Quinta do Bomfim and Quinta de Senhora da Ribeira produce intense and mature flavor that carries aromas of violet and mint. Dow carries a great legacy and rich history that dates as early as the late 1700s. The wine is made through modern methods using state-of-the-art technology, a small proportion is produced by threading.
The fermentation only takes two to three days because Port is a fortified wine that gives a rich, smooth, and aged flavor. The fermentation cycle is a crucial way to extract as much flavor, color, and tannins as possible from the grape skins. Dow's threads their wine by using stone 'lagares' (shallow treading tanks) and the Upper Douro location is one of the last places in the world that uses traditional treading.which results in creating the best Ports wine. The old lagares requires manpower which is rare to see in Upper Douro and the temperature is very difficult to control. Dow's team created the world's first purpose built automated threading system.
The lagar or "robotic lagar" is a low and square stainless tank that has mechanical treading pistons that move across the floor of the tank. Dow created this back in the mid 90s and used it during their 1998 vintage to trial how it works. Eventually by 2001 three robotic lagers were placed in the newly refurbished winery at Quinta de Senhora da Ribeira and made life easier and created more revenue. The invention of the robotic lager really developed an advanced process in winemaking in the Douro Valley.
