This year should be a lovely one with wonderful drinks to enjoy anytime; bubbly drinks are all the rage. Enjoy a champagne cocktail for a relaxing night in. To make a ‘Classic Champagne Cocktail,’ all you will need is 1 oz. Cognac, 1 sugar cube, 3 drops bitters, and 4 oz. chilled champagne. Drop the bitters onto sugar cube and let soak in, place the sugar cube in a champagne flute, add Cognac, and top with champagne. For a more slushy and bubbly feel, try a ‘Semifreddo Bellini.’ It’s made with 1 cup peeled, chopped peaches (freeze until hardened), ¼ cup peach schnapps, ¾ cup plus 2 tablespoons chilled champagne, 2 tablespoons superfine sugar, 1 cup of small ice cubes, and peach slices for garnish. To make it, blend the peaches, peach schnapps, 2 tablespoons champagne, sugar and ice in a blender until smooth. Divide the mixture up in 2 glasses, top off each glass with ¼ cup plus 2 tablespoons champagne, and then garnish with peach slices. This drink is tasty and exquisite.

For a pretty and refreshing cocktail, have ‘Lavender Champagne.’ It’s made with ½ cup sugar, 1 tablespoon dried lavender, 4 bottles of chilled, dry champagne, and fresh lavender sprigs for garnish. Bring sugar and ½ cup water to a boil in a saucepan, stir until sugar is dissolved, stir in dried lavender, and then remove from heat. Let the mixture cool off completely, and then strain out the lavender. Refrigerate this newly made syrup until ready to serve. Pour 6 oz. champagne and 1.5 teaspoons syrup into each flute, and garnish with a lavender sprig. Enjoy a fruity, yet more complex concoction called ‘Champagne And Orange Granita Cocktail.’ It’s made with 4.5 cups fresh orange juice, ¾ cup refined sugar, Elderflower liqueur, and 2 bottles of champagne. Combine orange juice and sugar, and then stir until sugar is dissolved. Transfer it to an 8-inch baking dish. Freeze, scraping around sides and breaking up and lumps with a fork every 30 minutes until evenly frozen (about 2.5 hours). Cover with plastic wrap, spoons ½ cup granite into each of the 12 glasses, and add ½ teaspoon liqueur, and then top with champagne. Your friends or colleagues will be thoroughly impressed with this drink. Enjoy.
