Description

Maker's Mark Cellar Aged is a limited bourbon released once a year. It starts as the classic Maker's Mark recipe of 70% corn, 16% red winter wheat and 14% malted barley. The whiskey first ages about six years in a regular warehouse. Then the barrels move into a limestone cellar built into the hillside at the distillery.

The cellar stays cool all year round. That slows the pull of tannins from the oak. Each release blends barrels that are roughly 11 to 14 years old. The result is deep and dark in flavor, but not bitter.

It is bottled at cask strength, so the proof shifts with each edition. The first release in 2023 came in at 115.7 proof. Later editions have landed between about 112 and 119 proof.

The tasting notes move a little from year to year. Most releases open with brown sugar, dark fruit such as cherry or raisin, and seasoned oak. The palate brings dark chocolate, ripe cherry and caramel fudge, with baking spice behind them. The finish is long, with oak and warm spice.

Sip it neat first, then add a few drops of water if the heat feels strong. One large ice cube works too. Serve it with aged cheese, grilled steak or a dark chocolate dessert. It is a special bottle to open with a bourbon-loving friend.
