Haku is a Japanese craft vodka from the House of Suntory. It is made from 100% Japanese white rice, called hakumai. Most vodkas start with wheat, corn or potato, so rice gives Haku a softer, rounder style. If you want a gentle change from other vodkas, this is a lovely place to start.
The process begins in Kagoshima, on the island of Kyushu. There, the rice is fermented with rice koji and run through pot stills. The spirit is then distilled again in two different ways. Next it travels to Osaka to be blended and filtered through bamboo charcoal. This Suntory step smooths the spirit while keeping the soft sweetness of the rice.
The name means both “white” and “brilliance” in Japanese. Pour a glass and you will find a soft, sweet aroma of delicate floral rice. The taste is rich and slowly fills your mouth with natural rice sweetness. It ends smooth, with a light sweetness that lingers.
Suntory lists a Gold Medal for Haku from the 2024 International Spirits Competition. It is bottled at 40% ABV, or 80 proof.
You can sip it well chilled to enjoy that silky texture. It also makes a crisp Vodka Soda or a clean, simple Martini. For food, try it with sushi, sashimi or light seafood. You will like it if you enjoy smooth, mellow spirits with a quiet sweetness.
