This Irish whiskey takes its cue from the style once loved by famous writers who spent long nights thinking, writing, and sipping. You get a blend of pot still and single malt whiskey, made in copper pots from 100% barley, just like in the 19th century. It then rests in Japanese Mizunara oak, which gives it a taste you won’t find in most Irish whiskey bottles.
When you take a sip, you’ll notice vanilla, clove, and soft sandalwood, with a gentle note that feels like Japanese incense. It doesn’t hit you hard. It moves slowly and lets the flavors open up. On the nose, you get apple, pear, plum, and sweet vanilla, which makes the first pour inviting.
The finish stays smooth and lightly sweet, thanks to its non-chill-filtered, natural style. You can enjoy it neat or with desserts like apple tart or vanilla panna cotta. It also works well with roasted pork or mild cheese.
