Willett 4 Year Straight Rye comes from the Willett Distillery in Bardstown, Kentucky. The family settled in Kentucky in 1792, the year it became a state. John David Willett founded the distillery after the Civil War. In the early 2010s, the family started distilling its own whiskey on site again.

They favor locally grown grain and old-school methods. The rye is a blend of two mash bills. One is high rye, with 74% rye, 11% corn, and 15% malted barley. The other uses 51% rye, 34% corn, and 15% malted barley. Both age four years in new charred oak barrels.

Bring the glass close and you get floral, almost botanical notes. Caramel apple and honey come next, with rye bread underneath. It is an unusual, lively nose that rewards a slow sniff.

The palate is sweet and spicy at once. You taste rye spice, caramel, and dark chocolate, with bright cherry and citrus. Cracked black pepper builds as you sip. The finish keeps that spice going, then fades into toasted grain and a short, dry close.

This is a barrel-strength pour, so the proof shifts a little by batch. Take your time with it, and add a few drops of water if you like. It goes well with smoked meats, slow-cooked stews, sharp cheese, apple pie, or dark chocolate.
