Wild Turkey Master's Keep Unforgotten grew out of a happy accident. In 2010, a crew member at the Lawrenceburg, Kentucky distillery mixed young rye into a barrel of mature bourbon by mistake. Master Distiller Eddie Russell tasted it and liked what he found. Instead of dumping it, Wild Turkey bottled it for a short time as Forgiven.

Unforgotten is the high-proof, extra-aged follow-up to that blend. Eddie married 13-year-old bourbon with 8- and 9-year-old rye whiskeys. Some of that rye is among the oldest Wild Turkey has ever released. The blend then rested again in rye whiskey casks inside Rickhouse B. That pre-Prohibition warehouse was a favorite of his father, Master Distiller Jimmy Russell. It is bottled at 105 proof.

The nose is fruit-forward, with caramel and oak right behind. On the palate you get caramel and sweet oak first, then dried fruit and a touch of honey. The finish brings black pepper and warm baking spices from the rye.

Pour it neat into a tasting glass and give it a few minutes to breathe. Add a little water if you want the dried fruit and pepper to come forward. At the table, try it with smoked brisket, spiced nuts, aged gouda or dark chocolate. Caramel desserts and maple-glazed bacon work well, too. Rich, smoky food brings out the sweet oak and keeps the spice in balance.
