Description

WhistlePig is best known for rye, but Declaration takes a softer path. It is a limited release made to mark America's 250th birthday. The bottle even wears a cracked Liberty Bell on top. Inside is a blend of high-wheat whiskeys from Vermont and Indiana.

The whiskey is aged twice in new American oak. It then gets a final rest in Wave Stave barrels, which add a toasty layer. It is bottled at 86 proof with no age statement.

Lift the glass and you will find wheat grain, hay and a crisp note of apple. A little oak and light pepper sit behind them. Some tasters also find soft honey, vanilla bean, caramel and butterscotch. The sip is sweet and fairly light, with flavors of fresh wheat bread and nuts like almond and chestnut. The finish is short and pleasant, with toasted bread and a dry hint of coffee and cocoa.
