WhistlePig The Boss Hog XII: Feather & Flame is a single barrel straight rye whiskey. Each barrel is bottled on its own at barrel strength, from 104.8 to 108.4 proof.

The rye first ages in new American oak. It then finishes in pulque curado de cacao barrels, a world first. Those barrels are seasoned with agave pulque, cacao and three Mexican chiles: chiltepin, guajillo and pasilla. The idea comes from two Aztec drinks, pulque and chili-laced xocolatl.

Your first sniff brings caramel, dark chocolate and orange zest. The palate is bright with citrus, then soft oak, cocoa and a little earthy spice. The long finish moves from savory cacao to herbal chili heat.

Sip it neat, or add a few drops of water. Dark chocolate, smoked nuts or aged cheese make good partners. It is a collector's bottle for serious rye fans.
