Description

Very Olde St. Nick Harvest Rye comes from Preservation Distillery and Farm in Bardstown, Kentucky. The family behind it revived the Very Olde St. Nick name, a label first made for the Japanese market. Harvest Rye is their yearly cask-strength rye. Bottles are scarce, and fans watch for each new release. This is a bottle you open for a good reason, or share with someone who loves big rye whiskey.

Here is how it is made. The team blends Kentucky pot-distilled rye with rye barrels from their older stocks. The whiskey spends at least seven summers in new American oak. Batches are tiny, just one to three barrels at a time. That is why one bottle can taste a little different from the next. It is a proper Kentucky straight rye, bottled at full cask strength and not chill filtered. Preservation keeps the mash bill private, so the exact grain recipe stays a secret.

The Harvest name has a simple story. The casks are emptied in early fall, right after the summer heat. Those hot months push the spirit deep into the charred wood. When the weather turns, the whiskey comes out loaded with barrel spice. So the name refers to the timing of the dump, not to a special grain harvest. Proof changes by batch and usually sits between about 114 and 119. Because each batch is so small, the strength on your label is the one to trust.

Pour a small measure first and let it rest. The nose opens with rye spice, warm baking spices and toasted oak. Caramel and cracked black pepper sit right behind them. On the palate the rye spice is bold and full. Dark chocolate and butterscotch bring sweetness, and cinnamon and clove keep it lively. The finish is long and warming. You will notice spice, oak and a light touch of vanilla. Let it sit for a minute after pouring and the sweeter notes open up.

At this strength, a few drops of water help a lot. Add them slowly and taste as you go. Sip it neat from a tulip glass and give it time. It loves smoked meats, grilled steak, aged cheddar and dark chocolate. If you mix with it, keep the drink simple so the rye leads. A stirred Manhattan or a Sazerac works well. Use a little less than you would with a lower-proof rye.

The judges noticed too. This rye won Gold at the 2024 San Francisco World Spirits Competition. It sits proudly in any whiskey collection. Collectors often keep one bottle sealed and open a second to enjoy. Most of all, this is a rye for slow sipping and good company.
