Description

Togouchi gives you a gentle, easy way into Japanese whisky. It comes from Chugoku Jozo, a Hiroshima company founded in 1918 and known mainly for sake and shochu. The company added whisky in 1990. Its blenders bring in Scotch malt and Canadian grain whisky, then age and blend them in Japan.

Maturation happens in an unusual spot. The casks rest in a 361-meter railway tunnel near the town of Togouchi. It was built in the 1970s for a line that was never used. Inside, the air stays near 14°C with high humidity all year. That steady, cool home suits a soft and relaxed whisky.

Pour a glass and you'll pick up honey and nuts, with a slight touch of peat. The palate is light and mild, with sweet grain, honey and a little chocolate. A faint peatiness stays on the finish. It never feels heavy.

Try it in a highball with soda and a lemon twist. It also suits light sushi, grilled seafood or a mild cheese.
