Description

Jim Tom's Signature is an unaged rye moonshine from Sugarlands Distilling Co. in Gatlinburg, Tennessee. The distillery sits right at the edge of the Great Smoky Mountains. The recipe honors Jim Tom Hedrick, the North Carolina moonshiner you may know from Discovery's Moonshiners. He teamed up with Sugarlands to make his shine legally, and the label carries his likeness. Jim Tom passed away in 2023 at age 82.

Don't expect a sweet, flavored sip here. This is a clear, 100-proof spirit (50% ABV) made from rye and never aged in a barrel. If you want something softer and dessert-like, a flavored liqueur from the Sugarlands range is a better match.

Sugarlands describes the taste as earthy, with spicy rye and toasted grain. Hints of black pepper run through the middle. On the nose you get the same rye spice with a clean grain sweetness. The finish is warm and peppery, and it hangs around for a while.

This shine has earned real respect. Jim Tom's unaged rye won a gold medal in the unaged whiskey class at the 2015 San Francisco World Spirits Competition.

At 100 proof, small pours work best if you sip it neat. A little water or a cube of ice tames the heat and brings the grain forward. It also makes a lively base for mixed drinks. Try it in a Jim Tom Collins, a Bloody Mary or a rye-style mule. You can build your own cocktails with ginger beer, lemon and fresh mint, too.

Pick this up if you like rye whiskey and want to taste the grain before any barrel touches it. It makes a fun gift for Moonshiners fans as well. Serve it alongside smoked pork, pimento cheese or a skillet of warm cornbread.
