San Simeon Cabernet Sauvignon comes from the Riboli family's estate vineyards in Paso Robles, California. The family has been in the wine business since 1917. For the 2021 vintage, the grapes came from three estate sites in the El Pomar District. These vineyards sit on steep hillsides with rocky, marine-derived soils. Warm days let the fruit ripen fully.
The 2021 blend is 85% Cabernet Sauvignon and 15% Petit Verdot. It spent 18 months in barrel, with 60% new French and American oak. That oak gives you baking spice and vanilla on the nose, over ripe dark fruit. Hints of nutmeg and tobacco come through too.
On the palate you taste blackberry and ripe plum, with black cherry close behind. Touches of cocoa and cedar add depth. Fine-grained tannins and solid acidity carry a long, smooth finish.
Critics have rated recent vintages well. The 2022 earned 99 points, Double Gold and Best of California at the California State Fair Commercial Wine Competition. Wine Enthusiast and Vinous each gave the 2022 vintage 91 points. The 2021 was a Wine Enthusiast Editor's Choice.
The winery suggests hard cheeses, charcuterie and rich cuts of red meat. Grilled lamb chops with rosemary and garlic are a favorite match. Steak, pork ribs and mushroom risotto work well too. The Paso Robles vineyards are certified sustainable by the California Sustainable Winegrowing Alliance.
