Redbreast Pedro Ximenez Edition is the first in a line of limited edition Single pot still Whiskies that were created to celebrate their close relationship with the bodegas and wineries of the Iberian Peninsula. Redbreast PX starts with a base of single pot still Irish Whiskey is matured in both bourbon and Oloroso Sherry casks before finishing in Pedro Ximenez hogsheads. On the nose are notes of sherry, oak, nuts, dried fruits, and cinnamon. The palate is rounded with intricate flavors imparted from the casks including toasted oak, sweet nuts, baking spices, and light vanilla.
