Description

Redbreast Pedro Ximénez Edition pairs Irish single pot still whiskey with rich Spanish sherry. It was the first release in the Redbreast Iberian Series and is now a permanent bottle. Like all Redbreast, it is triple distilled. You are pouring a whiskey shaped with care at every step.

It first matures in bourbon and Oloroso sherry casks. Then it is moved into Pedro Ximénez hogsheads from southern Spain. PX is a very sweet, dark sherry, and it leaves a gentle sweetness on the spirit. It is bottled at 46%, or 92 proof.

Nose the glass and you find fruit, spice and toasted nuts. The soft sweetness of the PX casks wraps around them. The palate is zesty and syrupy. Fruit, spice and toasted notes sit in good balance. The finish is rich and long, and the sweet flavors stay with you.

Pour it neat and give it a few minutes. A few drops of water can open it further. Enjoy it with dark chocolate or a small plate of dried fruit. It suits you best if you love sherried whiskey and take your time with a glass.
