Redbreast was originally bottled by Gilbey's, a Dublin spirits merchant whose distillery was located on Jameson's Bow Street until the mid 1800s until W&A Gilbey was founded in London in 1857 and O'Connell Street in Dublin in 1861. From then on, they grew their whiskey brand, crafting into what is now known as the the forerunner of Redbreast: J.J. Liqueur Whiskey 12 Year Old.
In 1968 the whiskey changed its appearance to a bottling that appears similar to the contemporary Redbreast as we know it today. After their official rebranding in 1991, Irish Distillers, known for the ever popular Jameson, Redbreast came into their own and has gone on to create over six varieties with more originals to come!
Redbreast Pedro Ximenez Edition is the first in a line of limited edition Single pot still Whiskies that were created to celebrate their close relationship with the bodegas and wineries of the Iberian Peninsula. Redbreast PX starts with a base of single pot still Irish Whiskey is matured in both bourbon and Oloroso Sherry casks before finishing in Pedro Ximenez hogsheads. On the nose are notes of sherry, oak, nuts, dried fruits, and cinnamon. The palate is rounded with intricate flavors imparted from the casks including toasted oak, sweet nuts, baking spices, and light vanilla. The finish is long and lingering with notes of sherry and oak. Sip this Irish Whiskey neat and enjoy its beautiful flavor range.
