This bottling of Rare Perfection comes from Preservation Distillery. Located in Bardstown, Kentucky, this distillery is also known for rare and desired whiskeys such as Very Olde St. Nick and Wattie Boone. This current release holds its own interesting history, and represents a lucky happenstance in which two barrels were discovered in the back of a newly purchased warehouse. Soon to be Rare perfection 14 and 15, the new owners reached out to the original and discovered they were filled with a four-grain mash bill bourbon which had been distilled in Canada, a whisky also known as Waterloo. These mature casks had been aged in the single level warehouse with year-round cold temperatures, resulting in an elongated tempering and achieving its “Rare Perfection.” This extremely limited release was bottled at cask strength 119.7 proof. The flavor profile is akin to those of bourbons of decades past, with a rich sweetness layered in with notes of leather and cigar smoke and butterscotch lingering on the finish.
