Penelope Havana is part of the Penelope Cooper Series, a line of cask-finished bourbons released each year. It starts with Penelope's Four Grain Straight Bourbon, aged four years. Its four grains are corn (74%), wheat (16%), rye (7%) and malted barley (3%). The bourbon is distilled in Lawrenceburg, Indiana, and bottled in St. Louis, Missouri.

Next comes a double finish. The whiskey spends about 12 months in Caribbean rum casks. Then it moves for one month into barrels that once held Penelope bourbon and later maple syrup. It is bottled at 93 proof, or 46.5% ABV.

The rum casks add molasses and tropical sweetness, while the maple brings depth and warmth. On the nose, you will find molasses, banana bread and rich maple. The palate offers caramel corn, charred oak and candied pecans. The finish lingers with vanilla, brown sugar and syrup, plus soft tobacco and spice.

Havana launched in December 2024 in a limited run of 4,500 cases. Pour it neat, add a single ice cube, or build an Old Fashioned with it. It goes nicely with dark chocolate, smoked meats or a handful of nuts.
