Description

Pearse Lyons 5 Year Single Malt is made in the heart of Dublin. The distillery sits inside the old St. James' Church in the Liberties, the city's whiskey district. It opened in 2017.

The whiskey uses 100% Irish malted barley and the distillery's own yeast. It runs through two small-batch copper pot stills. It then rests for five years in ex-bourbon casks from the sister distillery in Kentucky. No colour is added.

On the nose you'll find fresh oak, zingy citrus and vanilla. The palate is smooth and medium-bodied. Vanilla and toasted oak lead, with biscuit, candied fruit and gentle spice. The finish stays soft, with oak and a little warming spice.

Enjoy it neat, with a splash of water, or over ice. It also works in a simple highball or a light whiskey sour. For food, try smoked salmon, aged cheese, apple tart or roasted nuts.

This is a lovely bottle if you like a bright, easygoing Irish single malt.
