For fifteen years, Heaven Hill has released limited edition whiskeys in their Parker’s Heritage series. This series represents some of the best results of Heaven Hill’s creative experimentation, with each entry a unique addition to the line. Since 2013, a portion of proceeds from the sale of each bottle have gone to the ALS association in honor of the late Parker Beam, a Heaven Hill Master Distiller. The 2021 Parker’s Heritage release is a continuation of their experimentation with heavy char. The 11 year old whiskey is a wheated bourbon with a mash bill of 51% wheat, 37% corn, and 12% malted barley. After aging in heavy char barrels for 11 years, they were bottled with no chill filtration. Parker's Heritage Heavy Char 11 Year Wheat Bourbon has rich aromas of caramel, brown sugar, cocoa, vanilla and toasted wheat. The nose previews the palate, with notes of dark fruits, toffee, and caramelized sugar leading into notes of hot baking spices and toasted oak. The finish lingers, with the slow build to spices lingering alongside a mild maple sweetness and the roundness of warm toasted oak. Sip this whiskey neat, letting it sit in the glass and develop its depth of flavor.
