Old Elk Blended Straight Bourbon comes from Old Elk in Fort Collins, Colorado. Its mash bill is 51% corn, 34% malted barley and 15% rye. That is about four times the usual malt. It is 88 proof.

The key is Old Elk's Slow Cut proofing. Most bourbons are proofed in a day or two. Old Elk adds water slowly, over weeks, for a smoother bourbon.

You will smell vanilla, caramel, clove, maple and almond. Then come maple syrup, raw bran, chocolate, deep wood and coconut. Charred oak, vanilla bean and walnut linger.

It won Gold at the 2018 San Francisco World Spirits Competition. Wine Enthusiast gave it 90 points that year, and The Tasting Panel scored it 93. Sip it neat, on the rocks or in an Old Fashioned.
