It is distilled in Holland in a copper pot still that is about a hundred years old. "London Dry" describes the style here, not the town. The recipe is short and focused. It uses just six botanicals. Three bring the fruit: Italian juniper, sweet Spanish orange peel and grapefruit peel. Three bring the spice: angelica root, Moroccan coriander seed and cardamom. Fewer botanicals means each one can be tasted clearly. Lift the glass and you get fresh, piny juniper with bright grapefruit and orange zest. A soft hint of cardamom sits behind them. On the palate, juniper leads the way.
