Mount Gay The Coffey Still Expression has nothing to do with coffee. The name comes from the still. A Coffey still is a copper column still, and Mount Gay owns one of only three still working in the world. It sat in pieces for years before a 2019 rebuild. This seventh edition of the Master Blender Collection is the first release from it. Only 5,004 bottles were made.

The still is now called Blue's Still. It honors Reynold "Blues" Hinds, the longtime distiller whose memory helped bring it back to life. The rum starts with 100% Barbados molasses. It then ages four years in heavily charred ex-bourbon casks in St Lucy, Barbados. It is bottled at 58% ABV without chill filtering.

In the glass it shows a golden straw color. The nose brings pear and vanilla, with nutmeg and a light touch of leather. On the palate, grapefruit is the surprise. Oak, honey and cinnamon follow and give it warmth and body.

Mount Gay suggests you drink this one neat. At full strength it is bold, so take small sips. A few drops of water help the fruit open up. Save your cocktails for another bottle. A square of dark chocolate on the side is a nice touch.

It suits rum fans who like to compare how stills shape flavor. Next to Mount Gay's pot still rums, it shows a brighter side of the distillery.
