Description

Lágrimas del Valle La Sabina is a single-ranch plata tequila. Every Lágrimas vintage comes from one field, so each release tastes of its own place. La Sabina is the brand's fifth field and its first from Guanajuato.

The 100% blue Weber agave grows on Rancho La Sabina in Romita, about 1,760 meters up. The site sees wide temperature swings, strong winds and the odd frost. Huisache trees grow among the agave in dark, dense soil. The ripe piñas average 37 degrees Brix.

Production happens in El Arenal, Jalisco, at the Cascahuín distillery, NOM 1123. Master distiller Salvador "Chava" Rosales Trejo leads production. Masonry ovens steam the agave until it is soft and sweet. Most of it, roughly 70%, goes through a roller mill and ferments in steel. A stone tahona crushes the other 30%, which ferments with wild yeast in open wooden vats. It is double distilled, bottled at 46% ABV and made without additives.

In the glass it is bright and herbal. You'll find green herbs, palo santo and citrus on the nose. Guava, chalk and lightly roasted parsnip follow on the palate. The finish is warm, with white pepper and dried flowers.

Sip it neat at room temperature or slightly chilled to catch every detail. It also makes a lively Margarita or Paloma. Try it with ceviche, grilled seafood, citrus salads or goat cheese.
