Those casks once held Pritchard Hill Cabernet Sauvignon from Chappellet in Napa Valley. It is the most sought-after wine the winery makes.

The bottle comes in at 90.2 proof, or 45.1% alcohol. That moderate strength gives the wine cask room to speak. You get bourbon sweetness with a soft, tannic grip, much like a good red wine aged in oak.

On the nose, blackberry and black cherry lead the way. Licorice and dark chocolate sit just behind them. The palate turns fruity, with dates, apricot and a touch of Cabernet. A hint of lemon keeps it bright. The finish is long and smoky, with firm oak tannins.
