Jefferson’s was founded in 1997 by Trey Zoeller and his father Chet, a well-known bourbon historian. Their family legacy of whiskey production goes back all the way to his eighth generation grandmother who was arrested in 1799 for making and selling spirits. With years of tradition and a penchant for boundary-pushing ideas, Zoeller soon conceptualized what would become Jefferson’s.
After some experimentation, they discovered aging whiskey on the bow of a ship could result in a unique and dynamic whiskey unlike any other. The rocking of the boat and constant changing of the climate creates sweet, caramelized flavors similar to that of dark rums, and the sea spray and ocean air imparted a savory brine comparable to that of an Islay Scotch. Jefferson's Ocean aged at Sea Rye is aged in new char and toasted barrels before it is transferred to ships and finished on the open seas.
The bold character of the double-barreled rye balances with the rich caramelization from the sea-aging, with aromas of toffee, toasted marshmallow, and maple syrup, tasting notes of vanilla, leather, and tobacco and a spicy finish brimming with baking spices, cinnamon and a touch of sea salt.
