High West Cask Strength Straight Bourbon Whiskey (750Ml)

Description

High West Cask Strength Bourbon is bottled straight from the barrel with no water added. It is also non-chill filtered, so the full texture stays in the glass. Each limited release is a blend of straight whiskeys, finished in new, charred American white oak.

The recipe changes a little from year to year. The 2024 release blended straight bourbon with straight rye aged 6 to 10 years. Later releases use only straight bourbons from Kentucky, Indiana and Tennessee, aged 6 to 20 years. Proof shifts by release too, so check the label on your bottle.

High West's notes for recent releases share a common thread. On the nose you will find citrus peel, peach, apricot, honey and a touch of sarsaparilla. The palate brings cooked plantain, stone fruit, toffee, warm spice and oak. The finish lingers with white chocolate, dark honey and soft spice. One review of the 2026 release also finds warm leather on the palate.

Whisky Advocate scored the 58.5% release at 91 points. At this strength, a few drops of water help open the aroma. A large ice cube slows things down nicely too.

Pair a pour with smoked brisket, a grilled ribeye, aged cheddar or pecan pie. Pick this up if you love big, full-proof bourbon with plenty of fruit and spice.
