Description

High West Bourbon comes from High West Distillery in Park City, Utah. It is a blend of straight bourbons rather than a single recipe. One part is from MGP in Indiana, made from 75% corn, 21% rye and 4% barley malt. Another uses 84% corn, 8% rye and 8% malted barley. High West keeps some other parts of the blend private.

Every bourbon in the mix is aged at least two years in charred white American oak. The whiskey is never chill-filtered or carbon-treated. It is bottled at 92 proof, so it has a bit more body than many bourbons at this price. The high-rye recipes give it a little extra lift.

Pour a glass and you'll smell light caramel and sweet vanilla first. On the palate it turns rich and slightly earthy. Candy corn, honey nougat and sweet cornbread biscuits come through. The finish brings vanilla with a hint of caramel apple and pecan pie. It feels round and easy rather than heavy.
