George Dickel 8 Year Bourbon is made by George Dickel at Cascade Hollow Distilling Co. in Tullahoma, Tennessee. It rests for at least eight years in charred oak barrels. It is bottled at 90 proof. Released in 2021, it was the first Dickel whisky labelled as a bourbon. It shares the same mash bill, yeast, and chilled charcoal filtration as the brand’s Tennessee whisky. Master distiller Nicole Austin chose the barrels that best fit a bourbon style.

Lift the glass and you’ll find caramel corn, toasted nuts, and butterscotch. Vanilla and a little cinnamon sit just underneath.

The first sip is round and friendly. Vanilla comes first, then bright cherry and orange. Caramel and seasoned oak give it backbone. The finish lasts a good while, with almond toffee, oak, and a lively kick of spice.

Critics noticed it fast. Whisky Advocate scored it 93 points and placed it fifth on its Top 20 list for 2021. It then won Double Gold at the 2023 San Francisco World Spirits Competition. VinePair rated it 88 points and praised the value.

Sip it neat or over ice to catch the fruit and spice. It also builds a sturdy Old Fashioned or Whiskey Sour. Serve it alongside BBQ ribs, smoked meats, or a piece of dark chocolate.
