Domaine Passy Le Clou is part of the Famille Descombe wine group and produces elegant wines from the Chablis region of France. This Chablis Premier Cru (1er Cru) comes from the Beauroy vineyard located on the left bank of the Serein River, an area known for its concentrated and expressive wines. Made from 100% Chardonnay grapes—the only white grape allowed in Chablis—it is a dry white wine with a bright, mineral taste.
The grapes are grown in the cool northern climate of Burgundy, where Kimmeridgian clay and limestone soil add a distinctive mineral character. Domaine Passy Le Clou practices sustainable farming, is HVE Level 3 Certified, and is transitioning to organic farming. The wine is gently pressed and fermented in temperature-controlled stainless steel tanks to preserve freshness and purity. It then undergoes malolactic fermentation, which softens the acidity, and is aged on fine lees for added depth and texture, mostly in stainless steel and sometimes in neutral oak barrels.
This wine offers aromas of citrus, white flowers, flint, and pear with a crisp, round, mineral palate. It pairs beautifully with seafood, shellfish, or soft cheeses and reflects the timeless craftsmanship of the Descombe family, who took over the estate in 2017.
