Blue Spot 7 Year Old Cask Strength is a single pot still Irish whiskey from the Midleton Distillery in County Cork. It is bottled for Mitchell & Son of Dublin. The family once marked their casks with a dab of colored paint to show how long each would age. A blue spot meant seven years. This label was gone for more than 56 years before it came back.

The whiskey matures for at least seven years in bourbon casks, sherry butts and Portuguese Madeira casks. It is then bottled at full cask strength and is not chill filtered. The mash mixes malted and unmalted barley, triple distilled in copper pot stills.

Start with the nose. Light pineapple, kiwi, green banana and lime zest come first. Pot still spice, baked apple, hazelnut and toasted wood follow. The palate is smooth, with mixed fruit, a hint of clove oil and cracked black pepper. Vanilla, cinnamon and sweet spice join the nutty wood. The finish lasts, with exotic fruit and spice in balance. Whisky Advocate scored it 91 points.

At this strength, go slowly. Taste it neat, then try a few drops of water. It goes well with Irish stew, roasted nuts, mature cheese or a slice of apple pie. Any whiskey fan who likes a bold pour will want it.
