First launched in 2017, Tarsier Gin truly first began in 2015 when co-founders Tim Driver and Sherwin Acebuche took a backpacking trip around Southeast Asia. There, they fell in love with the region including its landscapes, people, and diverse array of fresh and vibrant flavors. Wanting to capture the simplicity and balance of the various cuisine they experienced, Tim and Sherwin began experimenting and producing their very first gin using copper alembic pot stills in a small room in the back of a pub. As they grew in ability so did their business, and they opened a larger distillery where they produce their gin using cold-distilled blends of distillates with bold flavors. Each bottle bears the symbol of its namesake; the Tarsier, which was commissioned and designed by young Filipino artist Juvel Tiu Modayno and later converted into the digital design printed on their bottles today. They continue to experiment with ingredients and flavor as they hone their craft and share their journey with the world. The Backpacking Series, inspired by their journey, includes Taipei Old Tom Gin. Tarsier Taipei Gin is inspired by the beauty of Taiwan and the teas which are famously grown here, particularly Oolong. This Old Tom style gin includes Tarsiers signature botanicals with Oolong tea, kumquat, hibiscus and ginseng. On the nose, it reflects light tea aromas offset by floral and herbal notes. On the palate, the gin is refreshing and fruity with just a touch of sweetness. A combination of zesty, floral, aromatic, tart and earthy, this balanced gin is wonderful in an array of cocktails.
