Founded in 1998 by Daniel and partner Georges, DAOU found its roots stemming from daniels wine-making in his rural San Diego garage and a one-acre vineyard of Cabernet Sauvignon. Ever since, they have come to produce transcendent wines that are the purest expression of the DAOU Mountain's terroir. The Pessimist is everything wonderful from a red blend. Composed of Petite sirah, zinfandel, syrah and grenache, the aromas are of intense blueberry, black raspberry and currant with hints of cherry, rhubarb and plum and slight notes of chocolate, toffee and vanilla.
The palate is vibrant, with a silky texture and flavors of cherry, cranberry, plum, raspberry and pomegranate with accentuating layers of a gentle spiciness and subtle earthiness. The powerful and harmonious blend carries through to a long finish of blueberry and black cherry. For pairing, the team at CWS suggests a slow-roasted lamb with cinnamon, fennel & citrus or a beef fillet with beetroot & horseradish.
