Heaven's Door Decade Series III is the third and final release in the brand's Decade Series. It is a blend, not a single whiskey. About 92% is straight bourbon and 8% is straight rye. Each part aged a full 10 years on its own before blending.

The whiskeys were distilled between 2011 and 2013. The rye spent time in sherry casks. After blending, the whole batch went into heavily toasted barrels from the French cooper Tonnellerie Radoux. That second barrel is the double barrel in the name. It is bottled at 100 proof and non-chill filtered.

Lift the glass and you will find roasted pecan and dried fruit. The sherried rye adds an aromatic, herbal lift. The bourbon brings a soft floral side. On the palate, baking spice meets a crack of white peppercorn. The finish is warm and lasts a long time.

Give it a few minutes in the glass before you sip. Then try it neat, and later with a few drops of water. It suits slow evenings with dark chocolate, smoked brisket, aged gouda or candied pecans.
