Proper No. Twelve is the Irish whiskey Conor McGregor created. The name nods to Dublin 12, the district that covers his home area of Crumlin.

It is a blend of golden grain whiskey and single malt. The spirit is triple distilled, in the classic Irish way. It then rests about four years in ex-bourbon barrels. Master distiller David Elder picked the final blend from close to a hundred samples.

Expect a light, easygoing whiskey with gentle sweetness. The nose brings honey and soft vanilla, with floral barley and a hint of lime. On the palate you find vanilla, honey and toasted wood. Apple sweetness and a little white pepper show up as well. The finish is warm and mellow, with more vanilla and a little oak.

This is a mixing whiskey at heart. Try it with ginger ale and a lime wedge. A cola and ice also works well. You can simply pour it on the rocks, too.

Pair it with wings, burgers or a board of cured meats. At 40% ABV, it is a friendly start for new Irish whiskey fans. It also suits a casual night in with friends.
