After a summer job bottling whisky as a lad, Graeme Macaloney fell in love with whisky-making and set out to make a living doing so on his own. After Studying the Irish pot still process of making whiskey and gleaning information on the maturation process from the renowned Dr. Jim Swan, Macaloney founded his distillery on Vancouver Island in Canada. To this day Victoria’s Caledonian Distillery operates alongside its brother, Twa Dogs Brewery, crafting whiskies with the finest tools and ingredients available. Macaloney's Caledonian Searaidh Braiche is their first Sherry cask matured single malt. From its conception to bottling, this spirit is matured in a combination of Oloroso and Pedro Ximenes STR casks. These shave, Toast, Rechar barriques were developed by Dr. Jim Swan, and impart intense Sherry and oak notes while promoting better oxygenation through charcoal filtering. Searaidh Braiche is full bodied with a creamy mouthfeel. Rich oak tannins and a hint of spice balance out plum, raisin, tropical fruits, malted barley flavors. The Whiskey finish is complex and long, with a robust Sherry kick and a bit of brine.
