Description
Domaine Matrot is a family estate currently run by two sisters: Adèle and Elsa Matrot. After taking over more active roles in 2011, the sisters have worked tirelessly alongside their parents in order to carry on the family tradition. The
chardonnay vines for this wine are an average of 35 years and each fruit is hand -harvested to ensure quality and correct development. Following, they are pressed with a pneumatic press, decanted for 24 hours, and then settled and placed into oak barrels for a full year of fermenting. Using natural yeasts and temperature control for the fermentation process, Matrot monitors and controls its development up to and after it is placed in steel vats for a month. After fining, if necessary, and a lenticular filtration process, this meursault is ready to be bottled. Domaine Matrot Meursault is a rich
white wine made from a blend of twelve plots. Both pure and full of character, this Meursault is both sweet and dry. On the nose are light aromas of citrus and tropical fruits. The palate is rich with a creamy mouthfeel balanced by flavors of peach, honey, melon, and a light nuttiness. An acidic tang leads into a long finish with a spicy nuttiness. For pairing the team at
CWS suggests shellfish such as grilled lobster with a butter sauce or try it alongside veal with white sauce.
