The agave is harvested for at least six years and has the highest sugar levels required in order to make a high-quality tequila. Cincoro is slow-cooked for 35 hours in a 35-year-old traditional clay oven, crushed with a traditional stone mill, and mixed with yeast. The tequila is an ex-American whiskey barrel at the distillery in an underground cellar to add flavor and complexity. Cincoro Reposado is barrel-aged at the distillery for 8-10 months.
