For a refreshing and citrusy combination, make a ‘Blarney Stone.’ It’s made with 2 oz. Irish whiskey, 1 oz. freshly squeezed lime juice, chilled ginger beer, and a lime twist garnish. Add whiskey and lime juice to a cocktail shaker, and fill it with ice; shake until well chilled (15 seconds), strain into an ice-filled highball glass; top with ginger beer, and then garnish with lime twist.
Have yourself a feminine and citrusy drink that is perfect for those nice summer months; a ‘Weeski’ is made with 2 oz. Irish whiskey, 1 oz. Lillet Blanc, 1 teaspoon Cointreau, 2 dashes orange bitters, and a lemon peel for garnish. Combine the ingredients in a mixing glass and fill with ice; stir well for about 30 seconds and then strain into a chilled cocktail glass. Twist a thin strip of lemon peel above drink and use as a garnish.
There’s always a right moment to bring back old fashioned drinks; a ‘Sazerac’ is a delicious cocktail from 1850, and it is just magnificent today. It’s made with ¼ oz. Absinthe, one sugar cube, 1.5 oz. rye whiskey, and 3 dashes of Peychaud’s bitters. Rinse a chilled old-fashioned glass with the Absinthe, add crushed ice and set aside. Stir the remaining ingredients over ice and set aside. Discard the ice and any excess absinthe from the prepared glass, and then strain the drink into the glass. Add the lemon peel for garnish.
When you’re in the mood for something sweet, try a ‘Penicillin.’ It’s made with 2 oz. blended scotch, ¼ oz. Islay scotch, ¾ oz. fresh lemon juice, 1/8 oz. honey syrup, 3/8 oz. sweetened ginger juice, and candied ginger for a garnish. Mix everything together except for the garnish; blend well, and then add the lovely candied ginger on top for added flavor and fun. Enjoy.
