Its chalky soils give spirits that age slowly and gain depth.\u003c\/p\u003e\n\u003cp\u003eThe hand-picked estate grapes are distilled in a pot still from the 1800s. The cognac rests in sessile oak, some barrels over 50 years old. VSOP means at least four years, but most of this blend is about seven.\u003c\/p\u003e\n\u003cp\u003eThe color is bright gold with bronze glints. The nose is floral, with ripe peach, clove, cinnamon and a hint of tobacco. On the palate, sweet spice and clove meet vanilla, dried fruit and a little licorice. The finish is very smooth, with almost no burn, and it lasts.\u003c\/p\u003e\n\u003cp\u003eSip it neat, or add a drop of water to open it up. Pair it with dark chocolate, aged cheese or rich meat.
